Alfred Schreuder brought Dusan Tadic and Brian Brobbey into the starting line-up with Kenneth Taylor dropping out injured.
Jorge Sanchez was once again at right-back with Devyne Rensch out and the Mexican opened the scoring after 15 minutes. A shot by Steven Berghuis was parried and Sanchez was there to net the rebound.
Ten minutes later, Steven Berghuis curled in a second before Brobbey headed in a third just before the break.
Schreuder decided to give Daley Blind a rest at half-time and Owen Wijndal was given his first minutes since August 14th. Fifteen minutes into the second half, Brobbey hammered the ball into the top corner to make it 4-0.
Ajax smelled blood and Tadic added the fifth on the rebound after Steven Bergwijn curled in the sixth. Substitute Mohamed Kudus added a seventh in the 81st minute.
Ajax would not keep a clean sheet though as Nikolas Agrafiotis nodded in a consolation goal.
The victory means Ajax are now top of the league while Excelsior is 12th.
